
Founders’ background
A chance meeting of like minds in 2015 developed into the desire to build a whisky distillery in Slovenia to showcase the expertise and craft, including local fabrication expertise, local high-quality wood for casks, premium used casks from excellent wines and brandies, and impeccable grains grown by trusted local farmers. The environmental conditions are perfect for whisky maturation (not too hot, not too cold, with modest humidity variations – a real goldilocks climate). The concept developed initially a single malt distillery setup to something much more emotive of the local environment – using both local barley to produce fantastic single malt, and using local rye (the name sake of the black mill) to produce a world-class rye whisky matured in Slovenian oak casks, all long-fermented in Slovenian Alpine Larch wood washbacks and matured on site.
Marko Hlebec, MA
With over 10 years of experience in developing Svarog Sistemi, Marko’s company started exporting wine equipment from local subcontractors within Europe and North America, but developed specialising in custom brewing & distilling equipment design, supply, and service. Marko, through Svarog Sistemi, continues to develop his range of products and has many references throughout the UK, Ireland, and Europe. Marko has expertise in supply chains, logistics, and compliance, bringing together documentation, and connecting suppliers and clients to provide cost-effective solutions to complex projects. He is also skilled in working with clients’ process engineers to help with value engineering solutions where needed.
Dr. JACK MAYO
Seasoned distillery manager and operations-led consultant in the UK and Ireland, as well as covering a number of international projects across whisky, vodka, rum, gin, and other distilled and rectified spirits. Jack has played a role in setting up and running several whisky and gin distilleries, with expertise in compliance, production ideation and management, liquid design & wood policy, procurement, and staff recruitment and training. Jack holds a PhD in Physics as well as an MSc in Brewing and Distilling.
